Birria, for some reason it's the official food of every Mexican "pari," I'm talking about birthday parties, bautizos, primeras comuniones, weddings, and baby showers. I've never liked birria de chivo, I've never liked the texture, the taste, or the smell but I would always eat it out of courtesy. In the last few years birria de res emerged and it's been a game changer though. I guess there's birria de borrego as well but I'm not getting anywhere near that!
